In 2014 a Local Buffalo farmer reached out to me and asked if I’d like to use Buffalo milk to male cheese. I decided to use my prize winning Blue Capri recipe and adapt it to a buffalo cheese. This cheese out sell the original. A Salty, Almost Fudgy Blue with a sweetness that lingers on the tongue.
